30 Minute Sheet Pan Dinner
The end of the school year is here and summer is on the horizon. I went over to the local farmers market to see all of the wonderful delights and found beautiful bunches of asparagus - YUM! I decided to toss the asparagus in a light marinade of olive oil, salt & pepper and garlic with some fingerling potatoes from the garden. Spread them out over a sheet pan and bake with some smoked kielbasa for a simple dinner in 30 minutes.
Here are the instructions:
Preheat oven 400F, prepare sheet pan with a sheet of parchment
- Make marinade: 2 TB olive oil, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic
- Cut potatoes to 1" pieces, toss with 1/2 of the marinade then spread out on a sheet pan in a single layer. Bake for 10 minutes
- Slice up kielbasa links into about 1/2" slices. place on sheet pan with potatoes and cook for another 10 minutes.
- Clean and halve the asparagus. toss with reserved 1/2 of marinade
- Pull sheet pan out of the oven, turn kielbasa over and lay the asparagus pieces around the potatoes and kielbasa. Bake for another 10 minutes (30 minutes total)
- Remove from the oven, and enjoy!
